Spanish-style small white beans that can be used in any bean dish. Rancho Gordo suggests piling them 'on a piece of grilled Tuscan bread, drizzle with fruity, green olive oil, and sprinkle with chopped sage and grated dry cheese, making an Italian beans on toast.".
They cook up quickly. Try cooking with ham or onion and celery. Thin skinned but hold their shape, so good for salads. Can be used in place of navy, great northerns, cannellini, Zolfini, or white kidney beans.
