Produced at home in our own stone mill, this is a coarsely ground version of the same ‘Cascade Ruby Gold corn as our corn meal. Carol Deppe, the breeder, provided this quick, simple alternative to the classic stir-all-day recipe: Bring 6 c water to a boil. Stir in 2 c polenta, add salt and 1 T butter or oil (optional). Stir for 7 minutes. Remove from heat, cover, and let stand for 40 min. Stir a bit (add some cheese or roasted vegetables before stirring if you’re really feeling decadent), and it’s ready to eat, Or transfer to a baking dish, and put in refrigerator until solid.
